Lehsuni Jowar Paratha (Fresh Green Garlic Sorghum Flat Bread)

Today I am partaking in one of my most favorite recipe. 

Breakfast is the most essential meal of the day. Eating healthy food options not only fuel you up, make you feel energetic, prevents you from getting too hungry, good for weight management and gives you relaxed and peaceful mind. If you avoid your very first meal of the day, you are more vulnerable to cravings and unhealthy food selections.




Today's recipe is exceptionally good and unique recipe of Jowar flour, and the special ingredient which makes this flat bread very special and scrumptious is Fresh Green Garlic. Fresh Green Garlic also known as spring garlic is very seasonal and available for short span that is before large bulbs begin to take shape on the plants. This looks similar to spring onions.




Fresh green garlic, add color, crunch and very delectable taste. Green Garlic Sorghum Flat Bread is the perfect breakfast for winter. Common names of Sorghum are jowar, jwar, juar, Joovar, Cholam.



Let's start with step by step recipe:

✒ Ingredients required for Hare Lehsun Wali Jowar Roti





  • 200 g Jowar Atta (Sorghum Flour)
  • 2 tbsp Ghee or cooking oil
  • 1 Handful of Spring Garlic (Stalks) - Finely chopped
  • 1 Handful Coriander Leaves
  • 1 medium size onion Finely chopped
  • 3 - 4 green chilies finely chopped or as per taste
  • Salt to taste
  • 60 - 80 ml Water for kneading the dough


Method:

◾ Combine all the ingredients mentioned above in a dough kneading plate, rub down the dough with sufficient water. 






◾Prepare a soft dough, This dough will not be very pliable and you will not be able to knead dough like wheat flour dough as gluten is missing in this sorghum flour. Divide dough into equal portions





◾ Choose a cheese cloth or plastic sheet or napkin. Place a ball of dough on a napkin.



◾gently pat it in a circular motion and flatten it to get a circle of about 5" in diameter.


gently  remove from napkin...



◾Heat a tawa, transfer dough very carefully onto a non stick hot tawa. 


◾Roast it on medium flame for 2-3 minutes...




◾once change in color, roast it on the other side for 2-3 minutes....




◾ add oil as an when required. 




◾Repeat until cooked from both the sides....







◾serve hot with Green Chutney or Curd.

Green Chutney




✏ Ingredients required




  • 2 Handful of Coriander Leaves
  • 2 medium size onions
  • 6-7 green chilies or as per taste
  • 1 Lemon
  • Salt to taste

Method


◾Wash, clean and roughly chop coriander leaves and green chilies.

◾Peel onions and roughly chop them.

◾Take a mixer grinder jar or a blender, grind all the ingredients to a smooth paste using very little water.

  1. This is great with atta. I have some jowar. I can soak it overnight and pour like pancakes right? With all the other ingredients. Will experiment on it. This roti looks great and tempting

    1. Hello Smitha,
      Jowar Pancake concept is new to me.. as we always use flour for this recipe. As you know jowar dough is unpliable so I'm not sure how it will turn out.. Jowar flour is easily available so better to try this recipe with jowar flour. This is my one of the most favorite breakfast food and infact last week i had prepared this tecipe by adding spicy pudina chutney and it turn out very very delicious..
