Veg Onion Fry Pulao



How to prepare Veg Onion Fry Pulao | Vegetable Pulao | Onion Vegetable Pulao | 



Veg Onion Fry Pulao is most scrumptious and healthy combination of rice cooked with onion and assorted veggies.


Pulao is a South Asian rice dish (in Afghanistan, Bangladesh, Nepal, Pakistan, India, Iran), likewise known as Pilaf. Pulao, Pilau, Pilaf, Paella means the same and go to the same fraternity.



In today's recipe, I will going to cook rice in draining method and then saute them with onions and boiled vegetables.

Ingredients:

✒ 1 cup Rice
✒1 medium size onion
✒1 carrot
✒1 medium size potato
✒50gms French beans
✒50 gms peas
✒3tbsp cooking oil


Dry ingredients

✒1tbsp Red chilly powder
✒1tbsp garam Masala powder
✒Salt to taste




Method

✏Step 1 : Mise en Place

◾ Wash and soak rice for 10 minutes, go with basmati, if not available then can make use of kolam rice.

◾ Peel the onions and chop them finely.



◾ Take French beans, pull the string off and strike off the tips and then cut into small cubes.


◾ Wash, peel and cut carrots very finely into small square cubes.

◾ Peel the potatoes and cut them into small cubes. Place them in water to avoid discoloration.




✏Step 2: Blanching of Vegetables

◾ Boil French beans, carrots, potatoes, peas together for 3-5 minutes, remove in colander and keep under tap water for a few minutes.




✏Step 3:  Cook rice by draining method

◾Add 3-4 cups of water (or enough to cover the rice by 2-3 inches). In this method rice is cooked, partially (cook 60-70%) in an open pot of boiling water, and excess water is drained off. This helps in getting rid of the excess starch in rice and the rice grains remain separate. 






✏Step 4: Cooking Time

◾ Heat oil (2tbsp) in a pan, add onions, sauté it for 3-5 minutes on high fire, till it turns golden brown. 






◾Add boiled vegetables and cook for 3-4 minutes.



◾Add dry ingredients that are red chilly powder, garam masala powder and salt to taste, mix and saute for a minute. 


◾ Add Rice, mix and cook rice for another one - two minutes on high flame, then cover the lid, cook on simmer for 3-4 minutes or till done.





◾ Serve hot with veg raita or dahi boondi.
