Turai (Gilki) Ki Sabzi in Elachi & Black Pepper..



How to make Turai Ki Sabzi | Gilki Ki sabji,  Turai (Gilki) Tamatar Ki Sabzi in Elachi & Black Pepper.. (No onion, no garlic recipe), Kali Mirch Wali Turai Ki Sabzi 


Turai (Luffa) is a vegetable of the two species Luffa aegyptiaca and Luffa acutangula. In English, luffa is also spelled loofah.

Turai, Tori or gilki torai in hindi, Toori (Tooriyun) in sindhi, ghosavala (घोसावळं) in marathi, neti beerakaya in Telugu.


Common names of this vegetable are: Galka, Egyptian cucumber, Silk squash sponge gourd, dishrag gourd, rag gourd, smooth gourd, water gourd and Chinese Okra Smooth.


Turai is very healthy and easy to digest vegetable. This is considered good and safe for pregnant and breast-feeding women.
For making Turai (Gilki) Tamatar Ki Sabzi in Elachi & black pepper we require:


(For five servings)

✔Preparation time : 10-15 minutes
✔Cooking time 15-20 minutes


Required

✒900 gm Turai 
✒4-5 medium size Tomatoes - finely chopped
✒ 4-5 Elachi (green cardamom)
✒ 3-4 tsp black pepper powder or as per Ur taste
✒2 tsp turmeric powder
✒1 tsp cumin seeds
 ✒ 1tsp hing
✒3-5 curry leaves
✒ 2 green chillies 
✒Salt to taste
✒1 tbsp ghee or cooking oil


Step 1 : Vegetables cutting


◾Wash and peel the turai thoroughly. Slice lengthwise and then make small cubes. Please taste for bitterness, if bitter in taste, simply discard that part.




◾Chop tomatoes finely.




Step 2: Grind Black Pepper Corns

◾I prefer fresh coarsely ground pepper corns then using the powdered one which is already made. Freshly grounded pepper corns enhances the pepper's hot biting flavor. Take mortar and pestle, and coarsely ground pepper corns in that, we need just one tsp.


Step 3 : Cooking Time

◾Heat oil or ghee in thick bottomed pan, add  cumin seeds, crushed green cardamom, curry leaves and hing. Saute for 5-7 seconds, let them splutter, but don't allow cardamom to change in black color.



◾Add turai, mix well, cook on high flame for 2-3 minutes...





◾then cover with lid, slow the flame and cook for 7-8 minutes....


◾When you remove cover, you will see lot of water oozed out from turai..


◾Now add black pepper power, mix well...



◾ Add finely chopped tomatoes and all dry ingredients that is turmeric powder and salt. (This vegetable requires salt in less quantity, so add according or as per your taste).



◾Mix well, slow the flame and cook for 5-7 minutes till water is completely evaporated and turai is cooked.




◾Serve hot with chapati, garnish with coriander leaves.
