Spicy Tendli Stir Fry..





Coccinia grandis (Ivy gourd) also known as Tindora, tendli, tondli, baby watermelon and little gourd.





Tendli is very good source of beta-carotene, vitamin c and protein. It is rich in fiber which helps in digestion, prevents constipation. Tendli is also considered good for diabetes as helps in controlling blood sugar levels.


My today's recipe is very simple as added only the basic Indian spices and no complex curry powders.


This recipe is very good for health conscious people, as tendli is sauteed in very little oil but if you want more tasty and crunchy tendli then rather sauteing, shallow fry tendli and then add all Indian spice's.




(For four servings)

Preparation Time : 5-10 minutes
Cooking time : 15-20 minutes

◾Required:
✒250 - 300 gms Tendli
✒1 tbsp cooking oil



◾Dry ingredients

✒4tsp red chilly powder
✒3tsp coriander powder
✒½tsp turmeric powder
✒1 tsp Amchur Powder
✒salt to taste

Process

✔Step 1: chopping of Tendli

◾ Wash the tendli and remove the tip and the tail end. Cut them in two halves.


✔Step 2: Cooking Time

◾Heat oil in a pan, add tendli, sauté them for 10 -12 minutes, first 1-2 minutes on high flame and then let it cook on simmer, stir in between.

◾Now add dry ingredients i.e red chili powder, coriander powder, turmeric powder, dry mango powder and salt to taste, mix well, and cook for another minute or two covering lid or till tendli is cooked, if needed add very little water, after you add dry ingredients, to avoid them getting burnt.

◾Serve hot.
